Ruth Fennimore farms 22 acres in the Eola-Amity Hills, where the Pacific wind cools the vineyard every afternoon and keeps the Pinot Noir bright. She flies in from Oregon to pour five wines with Rafael’s four-course dinner and to tell the story of each one.

The menu

Arrival: a glass of Fennimore Ridge sparkling Pinot Noir, with warm marcona almonds.

First: smoked trout rillettes, pickled apple, rye crisp. With the 2023 unoaked Chardonnay.

Second: roasted delicata squash, brown butter, sage, pepitas. With the 2023 Pinot Gris.

Third: seared duck breast, Carolina Gold rice, cherry and port jus. With the 2022 Pinot Noir and the single-block Pinot Noir from 2021.

Fourth: aged cheddar and a black walnut tart. With a library Pinot Noir from 2016.
