Étienne Boisseau is the sixth generation to farm Domaine du Gué Rouge, in the Loire Valley near the town of Chinon. His Cabernet Franc grows in limestone caves and his Chenin Blanc on the slopes above them. He pours five wines with a four-course dinner of rillettes, roasted root vegetables, a slow-braised pork shoulder and a tarte Tatin.

Good to know

$95 a person covers the dinner and all five pours; tax and service are not included. Seating is at shared tables, with a table of your own for parties of four. Vegetarian menus are available with a few days’ notice. You can cancel online up to a day ahead.
